Lining cookie sheets with aluminum foil is so passe.  Instead, try using a silpat.  At about $25 each, you’re not likely to make your money back on what you save on aluminum foil. But, they are well worth the cost.  NOTHING sticks and you are re-using the silpat, so think of how green you are, too!!!

There is no need to spray cookie sheets.  Cookies and the like slide right off.  You do need to wash the silpats by hand, so that’s clearly not as convenient as just throwing away a foil liner. Nonetheless, these are worth the trouble because of the non-stick factor.  Also, cookies seem to bake more evenly and the bottoms don’t burn-win-win situation.

They also last and last and last.

    I LOVE my silpat!! I don’t like aluminum foil in general, so I don’t buy it but sometimes one needs to cover let’s say a pan of lasagna…silpat does that TOO!! I did put a sheet pan underneath it all though and glad I did, but would have needed one w/ foil too.
